Chop Birch Trees — the ones with white bark and pink leaves. The starting Rusty Axe works, so Light Wood is available from night one.

Finding Birch Trees

Birch Trees spawn scattered around the map, with your own farm being a dependable spot, though they are rarer than the plain wood trees.

Not sure which tree you are facing? Walk up to it and check the "shake" prompt at the bottom of the screen — it names the tree type before you commit energy to chopping.
